Abstract

NNIR spectroscopy was employed in this experiment to test the freshness of Tilapia (Oreochromis niloticus niloticus) samples. Monochromatic ray was made to reflect on the fillets and eventually, absorbance was computed and plotted with respect to its corresponding wavelengths. The experiment showed that the refrigerated Tilapia absorbed more near near infrared radiation compared to the absconded Tilapia. It also showed that there is a significant difference between the two sets of samples in terms of freshness.
